What a great post and a great reminder of who is the face of an industry. I have also been a waitress, and though I am now the one being served instead of serving, I will never the skill and endurance it takes to work in a restaurant.

Quite a hard job that teaches you a lot. Wini stayed with the industry all the way to a top food writer. Her memoir is remarkable.

Back in the day, many of us worked in restaurants in high school! I wonder if that's the case any more. The experiences served me well for the rest of my life!

I have many of the same memories of waiting tables in high school. I learned so much about human nature doing that job - the good, the bad, and the just plain ugly.
